Chef Paul's Pantry Tomato Soup

Ingredients for aproximately 6 servings:

2 tbsp. butter                                                   

½ cup onion, minced                                     

2 cans plum tomatoes (14.5 oz. each)                    

3 tbsp. tomato paste                                     

1 tbsp. onion powder                                    

1 tsp. sugar

½ tsp. black pepper                        

Pinch salt (to taste)

3 cups half & half (or as needed)                                              



Add butter to large sauce pan on medium high heat.  Once butter has melted, add the onions and cook until soft/translucent, about 3-5 minutes.

Add plum tomatoes, tomato paste, onion powder, sugar, black pepper to the onion mixture and stir well.  Lower the heat and let simmer for 20-25 minutes.

Using an immersion blender, or if needed, transfer tomato mixture food processor, puree until the tomatoes smooth (and if needed, return blended tomatoes to sauce pan).

Add a pinch of salt, to taste, add in half and half. You may want to adjust the amount of half and half to your liking, and preference for thickness of soup.  Bring back to simmer, and serve.  Makes approximately 6 servings.
